Gluten-Free Coconut Pancakes

 

Get a delicious and healthy start to your day with these delicious triple coconut pancakes using embē organic coconut flour, milk, and oil.

Makes: 4 servings (about 2-3 pancakes per serving)

Ingredients:

  • 1 cup gluten-free baking mix (such as Bisquick Pancake & Baking mix)
  • ¼ cup embē organic coconut flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups embē organic coconut milk
  • 2 eggs
  • 2 tablespoons embē coconut oil, melted

Toppings: maple syrup, fresh berries, and coconut flakes

  1. Preheat a nonstick pancake griddle on medium heat.
  2. Whisk together first 4 ingredients (baking mix through salt) in a large mixing bowl.
  3. Whisk together milk, eggs, and oil; add to dry ingredients and whisk until smooth.
  4. Drop batter by slightly less than ¼ cupfuls onto a hot greased griddle. Cook 4 to 6 minutes or until batter flattens out slightly and edges are set and dry; flip and cook 2 more minutes until golden and cooked through.
  5. Serve hot with toppings as desired.
