Makes: 4 servings (about 2-3 pancakes per serving)
Ingredients:
- 1 cup gluten-free baking mix (such as Bisquick Pancake & Baking mix)
- ¼ cup embē organic coconut flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 ½ cups embē organic coconut milk
- 2 eggs
- 2 tablespoons embē coconut oil, melted
Toppings: maple syrup, fresh berries, and coconut flakes
- Preheat a nonstick pancake griddle on medium heat.
- Whisk together first 4 ingredients (baking mix through salt) in a large mixing bowl.
- Whisk together milk, eggs, and oil; add to dry ingredients and whisk until smooth.
- Drop batter by slightly less than ¼ cupfuls onto a hot greased griddle. Cook 4 to 6 minutes or until batter flattens out slightly and edges are set and dry; flip and cook 2 more minutes until golden and cooked through.
- Serve hot with toppings as desired.
