Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk (shake well before measuring)

For the frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Begin and end with the dry ingredients, mixing just until combined.

  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

  8. While the cakes are cooling, prepare the Coconut Cream Cheese Frosting. In a large bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

  9. Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake, covering the top and sides.

  10. Sprinkle shredded coconut on top of the frosted cake for a decorative touch.

  11. Slice, serve, and enjoy the tropical bliss of your homemade Moist Coconut Cake with Coconut Milk!
